    Biography

    Víctor Bergerot is the chef responsible for La Charcuterie, a family project opened in Madrid in 2025 together with his parents, Guillaume Bergerot and Dori Benito, and pastry chef Julien Germain. Born in Paris and with Spanish roots on his mother's side, he trained at the Paris Hospitality School after beginning his professional career in another field. He subsequently worked in different establishments in the French capital and, after moving to Madrid, worked in the kitchens of Le Bistroman and Allégorie. 
    At La Charcuterie, he has developed a project centred on French artisanal charcuterie, with its own production kitchen where the different preparations are made daily and can then be enjoyed on site or purchased to take away. Together with Julien Germain, he works on preparations such as pâté en croûte, pâté de campagne, rillettes and quiches, as well as a range of pastry creations. 
    The offering also incorporates French and Spanish products selected from small producers and establishes a link with Bergerot's family roots, particularly in Salamanca. The project combines the traditional craft of French charcuterie with a personal perspective and references to Spanish produce, in a format bringing together a production kitchen, shop and tasting space.
