    Biography

    Miguel de Aguilar is a chef and, together with João Kather, founder of Tetsu, a restaurant that opened in Madrid in 2025. From Madrid, he trained at MOM Culinary Institute, where he met Kather and Sergio Tamayo. During his training, he worked at Enigma before taking the step of launching his own project with Kather. 
    At Tetsu, Aguilar develops Japanese-inspired cuisine centred around the griddle, combining Japanese techniques with produce and references from Spanish and Mediterranean cooking. The food is prepared in front of a counter and the offering includes a changing menu and omakase menus, creating a direct relationship between the kitchen and the diner. 
    His career reflects the transition from professional training to creating his own restaurant at an early stage of his career. At Tetsu, he works alongside Kather and Tamayo to develop a cuisine that seeks to establish its own identity through produce, technique and different gastronomic influences.
