    Biography

    Martina Polo is a freelance gastronomic consultant. Her career began in the kitchen, after training at La Cónsula in Málaga and working at restaurants including Kokotxa and as executive chef of the Gastroleku group. She subsequently completed the Master’s Degree in Innovation and Restaurant Management at Basque Culinary Center, broadening her perspective on restaurant management. 
    She currently works with data, processes and strategic decision-making to help restaurants become more professional and improve their operations. Her work covers areas such as profitability, digitalisation, process standardisation, costs, pricing strategy and data analysis. She also supports teams in implementing management tools and defining working systems. Her profile combines a background in the kitchen with a focus on the overall management of the restaurant, based on the conviction that the kitchen, front of house and management should move in the same direction. Her work provides an insight into key issues in the management of gastronomic businesses, from controlling resources and costs to making data-driven decisions.

    A change in mindset around the internal organisation of the new restaurant —including questioning the hierarchy of positions and the very role of the “chef”, as well as reconsidering working hours— means rethinking human resources management in the restaurant of the future. Fear of failure or a lack of tools for finding investors can also be limiting factors. In addition, women’s lack of self-confidence can add another barrier in this context. Another issue to consider is the compatibility between values and money: is it possible to pursue an approach based on social, economic and territorial sustainability within a profitable business?
