Lluís Roger is the chef of BCN Taste & Tradition, a Houston restaurant dedicated to contemporary Spanish cuisine. Trained at Barcelona's Escola d'Hostaleria Hofmann, he completed his studies with an internship at elBulli alongside Ferran Adrià, a period that influenced his approach to cooking and to combining tradition with creativity.After his time at elBulli, Roger broadened his experience by working in different destinations and kitchens, including Fragata and El Cafè de l'Acadèmia in Barcelona, and Hotel Ra, where he was in charge of the pastry section. Before moving to the United States, he was executive chef at Mas Anglada in the Empordà, where he worked with local produce while also teaching at the Aula Gastronòmica de l'Empordà.
In 2014, he opened BCN Taste & Tradition with Ignacio Torras, with the aim of bringing Houston a Spanish cuisine free from stereotypes and based on tradition and produce. His approach brings together references from different Spanish regions and places particular emphasis on ingredients from Spain, combining traditional recipes with a contemporary interpretation.
BCN Taste & Tradition currently holds one Michelin star. Roger is also behind MAD, a more informal Spanish restaurant project that opened in Houston in 2019.
