    Biography

    João Kather is a chef and, together with Miguel de Aguilar, founder of Tetsu, a restaurant that opened in Madrid in 2025. Originally from Brazil, he trained at MOM Culinary Institute, where he met Aguilar and Sergio Tamayo. During his training, he also worked at El Celler de Can Roca before embarking on his own project with Aguilar. 
    At Tetsu, Kather develops Japanese-inspired cuisine centred around the griddle, combining Asian techniques with produce and references from Spanish and Mediterranean cooking. The food is prepared in front of a counter where diners can closely follow the work of the chefs, and the offering includes a changing menu and different omakase menus. 
    His career has been closely linked from an early stage to the creation and development of Tetsu, a project in which he works alongside Aguilar and Tamayo to develop an individual approach based on technique, produce and direct interaction with the diner.
