    Biography

    Carolina Álvarez (Monterrey, Mexico) is the Head Chef at Flores Raras (València, 2 Michelin stars).
    She has been part of the Quique Dacosta Group for 16 years. Her career began at Vuelve Carolina and the former El Poblet, before moving to the three-Michelin-starred Quique Dacosta Restaurante in Dénia. There, she worked across different sections of the kitchen before becoming Head Chef in 2020. She held this position for more than six years at one of the world’s best restaurants and the only one in the Valencian Community to hold three Michelin stars. During this period, she received the award for Best Female Chef from the Royal Academy of Gastronomy of the Valencian Community.
    Today, she leads Flores Raras with a distinctive perspective. Located at 8 Correos Street in the heart of València, the restaurant reflects her own way of understanding cuisine. Thanks to her talent, dedication, hard work and leadership, she has established herself as a key figure within one of the most influential and internationally recognised gastronomic groups. Few women chefs lead the kitchens of major restaurants, and she feels that this is her moment to blossom. She has always felt deeply connected to València and is embracing the project she is now building with great enthusiasm.

    This talk explores flowers as a source of inspiration in haute cuisine: not only as an ingredient, but also as a form, landscape, memory and language. Through a selection of dishes from Flores Raras, we will discover how a flower can become the starting point for a creation, represent a territory, evoke a season or even convey an emotion.
    But flowers also allow us to speak of something deeper: a cuisine that is born in València and opens itself to the world, one that starts with produce and memory while incorporating everything that has been experienced, tasted and learned. A cuisine seen through Carolina Álvarez’s experience. And, above all, a cuisine that seeks to make you feel.
    Because at Flores Raras, the flower is a metaphor for what is about to happen, for anticipation and for those small emotions that emerge when something new begins to bloom.
