Biography
Carito Lourenço is a chef, entrepreneur and creator of gastronomic concepts. Born in Córdoba (Argentina) and based in Valencia (Spain) for almost 20 years, Carito represents a new perspective on Mediterranean cuisine, guided by intuition, technique and an emotional commitment to each product. Her cuisine, shaped by memory and avant-garde thinking, combines Argentine roots, Mediterranean flavours and a deep connection with fire, seasonality and the surrounding environment. The first Argentine chef to earn a MICHELIN star (2022) for FIERRO, she has been recognised for her ability to tell stories through flavour and for her commitment to building a more equitable and sustainable gastronomy.
