    Biography

    Xune Andrade is the chef and person responsible for Monte, a restaurant in San Feliz, in the Asturian municipality of Lena. The project, launched in 2019, was born from his desire to cook from the place where he lives and to develop an approach closely connected to the territory, culture and people of the central Asturian mountains. Before opening Monte, he worked in kitchens including Casa Gerardo and L’Alezna and furthered his training with placements at restaurants such as El Celler de Can Roca and Quique Dacosta. 
    At Monte, he offers a contemporary reinterpretation of rural Asturian cuisine, working with seasonal produce and a network of small-scale producers, farmers, livestock breeders, fishermen, foragers and craftspeople from the surrounding area. His relationship with them is a fundamental part of the project: proximity, knowledge of origin and full use of the produce determine much of his approach. 
    Andrade's cuisine incorporates techniques such as grilling over embers, fermentation and long-cooked stocks, always through a personal interpretation of the Asturian landscape. Monte currently holds one Michelin star.
