It encompasses the people, knowledge, products, landscapes, techniques and ways of life that, generation after generation, have shaped the food identity of a territory.
Protecting this heritage means, first and foremost, protecting the people who keep it alive: farmers and livestock breeders, fishers, artisans, small producers and distributors, chefs and local communities. It also means recognising the fundamental role of women in preserving and passing on much of this knowledge.
The presentation will address the need for professionals capable of identifying, documenting, preserving and promoting local gastronomic heritage, understanding gastronomy as a tool for territorial development rather than simply as a tourism resource.
It will also explore the importance of local and community-based governance, enabling communities to participate in the protection and management of their own heritage, while supporting the conservation of food landscapes, the transmission of knowledge and the continuity of the activities that sustain them.
A perspective on gastronomic heritage as a driver of identity, local development and responsible tourism, capable of creating economic opportunities without displacing communities or transforming what gives this heritage its true value: its connection to people, culture and territory.
