    Biography

Manuel Costiña is the third generation to lead Retiro da Costiña, the family restaurant in Santa Comba founded by his grandparents in 1939. He grew up connected to the family business and has continued to develop a cuisine deeply rooted in Galicia, taking its recipes and local produce as his starting point.
His approach begins with Galician tradition and seeks to bring it into a contemporary interpretation without losing its connection with the territory. Local produce plays a fundamental role in his cooking: the restaurant itself states that around 90% of the ingredients used come from within a radius of less than 50 kilometres. Costiña also works with producers and raw materials from the surrounding area, including seafood, vegetables and meat.
In recent years, Costiña has also explored the recovery of family gastronomic memory. To shape his current offering, he has reviewed recipes and preparations from his grandparents and earlier generations together with his parents, Jesús and Pastora, reinterpreting them through his own perspective. Retiro da Costiña currently holds two Michelin stars, awarded in 2008 and 2024.
