    Juanan Vizcaíno

    Biography

Juanan Vizcaíno heads Zaytun, a restaurant he opened in Barcelona’s Sants neighbourhood. Born in Barcelona in 1995, he began working in kitchens at the age of 16 and, after working in different restaurants, decided to launch his own project. At Zaytun, he works almost single-handedly in the kitchen, while his mother, Anna Maria Soria, runs the dining room. His cuisine is rooted in his family heritage: the traditions of Jaén, linked to his father’s family, and his mother’s Catalan cooking. This combination is present in an offering that began with a stronger focus on both traditions and has gradually incorporated references from other cuisines. At Zaytun, he revisits familiar recipes and preparations from a personal perspective, with dishes that combine produce and techniques from different origins. The offering remains rooted in his family heritage, while broadening its perspective without giving up the freedom to develop his own style of cooking.
