    Biography

Elisabeth G. Iborra is a journalist, writer and communicator specialising in meat. In 2025 she obtained the title of Sommelier de Carne from the Faculty of Veterinary Sciences of the University of Buenos Aires, becoming the first Spaniard to complete this training. Her specialisation builds on a long professional career in gastronomic and travel journalism and on her interest in gaining a deeper understanding of meat as a product.
Her work as a meat sommelier encompasses knowledge of different breeds and cuts, the organoleptic characteristics of the product, production systems, ageing and cooking techniques. She also pays particular attention to the origin of meat and to the relationship between producers, restaurant professionals and consumers, with the aim of fostering greater knowledge and appreciation of the product.
From Zaragoza, she currently works in communication, training and consultancy related to meat. She has taken part in professional conferences and meetings, tastings and gastronomic activities, and works to bring to Spain the knowledge acquired during her training in Argentina. Her profile combines her background as a journalist and writer with a recent and unusual specialisation within the Spanish gastronomic field.
