Denisse Espinoza is head of front of house at Barro, Carlos Casillas's restaurant in Ávila. Trained in Psychology, she approaches her work with a particular focus on people, the team and the care of service.At Barro, she leads the front-of-house team, manages the pace of each service and pays attention to details that can improve the experience of diners. Her background gives her a particular sensitivity to understanding the needs of those sitting at the table and anticipating the different situations that may arise during service.
Her approach to front-of-house combines attentiveness, high standards and discretion. Caring for the team and continually seeking improvements are part of her everyday work, alongside a deep connection with the hospitality profession. Barro, which currently holds one Michelin star, develops a cuisine linked to the territory and local produce.
