    Biography

    Beltrán Sastre Llorente is a chef and restaurateur from Segovia who has been based in Barcelona for more than 14 years. He studied Restaurant Management at the Escola Superior d’Hostaleria de Barcelona (ESHOB), before embarking on a professional career closely linked to traditional cuisine and quality ingredients.
    Throughout his career, he has worked at renowned Catalan restaurants such as Els Pescadors and Windsor, experiences that helped strengthen his knowledge of local gastronomy and market-driven cuisine.
    In 2018, he opened Echegaray, his own restaurant, where he offers a culinary concept based on traditional, seasonal and locally sourced cuisine. His philosophy focuses on respect for ingredients, seasonality and collaboration with small local businesses and suppliers whenever possible, championing a style of hospitality that is closely connected to its community and territory.

    In this second part of the showcooking, black rice will take centre stage, exploring the ingredients, techniques and connection between rice dishes and Mediterranean cuisine. Its preparation will also provide an opportunity to revisit the reactions and sensations it inspired among the Chinese chefs and discover how they interpreted a dish so deeply rooted in our culinary culture.
    To conclude, crema catalana will reveal the sweeter side of this gastronomic journey. Its preparation will provide an opportunity to explore the tradition behind one of Catalonia’s most recognisable desserts and share the surprise and reactions it generated during the experience in China.
    Ingredients, recipes, territory and shared experiences come together to show how Catalan cuisine can express its identity and create connections even thousands of kilometres away from its place of origin.
