Biography
Abel Valverde is one of the most recognised front-of-house professionals in Spanish gastronomy and currently leads the service at Desde 1911, a Pescaderías Coruñesas project in Madrid. His career is particularly associated with Santceloni, where he was first maître from 2001 to 2010, following six years working at El Racó de Can Fabes alongside Santi Santamaria.Throughout his career, Valverde has developed an approach to front-of-house based on product knowledge, customer care and team training. Service, cheese and the transmission of knowledge to new professionals have been among the areas to which he has devoted much of his work, both in restaurants and through courses and training projects. He is also the author of the book Host. La importancia de un buen servicio de sala.
In 2021 he joined the Desde 1911 project, where he works alongside the kitchen team and contributes to shaping a proposal centred on fresh fish and seafood supplied by Pescaderías Coruñesas. The restaurant bases its offering on the produce available each day and on traditional techniques, with wood-fired cooking playing a prominent role. Desde 1911 currently holds one Michelin star. In 2026, Valverde also received the Michelin distinction for Service.
