Cooking as a Trench

We explore how the act of cooking is becoming a form of reivindication: a way of pausing, breaking with the direction in which society is heading and preserving what is unique to each region as part of our identities. We show how, at Caín, we are doing our bit to ensure that we can continue to enjoy dishes that require time and patience.
