Biography

Carito is the creative head and soul. With the aim of generating a new culture of Mediterranean cuisine, she draws on her tasty Latin roots, the traditions of her native Córdoba and the diverse pantry of Valencian gastronomy. Two contrasting perspectives that flow together when designing each menu. Carito blurs the boundaries between sweet and savoury, combining flavours treasured in her memory with cutting-edge techniques and approaching each product to bring out its maximum expression.

In this presentation, Carito Lourenço shares the journey of a year's work dedicated to reinterpreting horchata from a contemporary and sensitive perspective, exploring its potential in haute cuisine.

Through three show cooking demonstrations, Carito will show how horchata can transcend its traditional character to become part of the world of fine dining, blurring the boundaries between sweet and savoury and creating a language of its own in which technique, memory and emotion intertwine.
