Biography
Luis Emilio Cortes Lastra is a chef with over 25 years of experience managing kitchens and culinary teams. About ten years ago, he discovered the world of yeast and pizza, training with renowned Italian pizza masters such as Alessandro Lo Stocco, Gabriele Baldi, and others.His constant drive for improvement led him to open his own pizzeria in Madrid, and for the past eight years, he has collaborated with Moretti Forni. Today, he focuses on training, consulting, and baking education, sharing his expertise at international events and professional workshops.
